Here are a few picts of our cover. Again it's actually a rain fly from a tent. It has one fiberglass pole side to side in the middle, the rest we bungie to the toe rail.

It's not to good if it's windy, but it's up and down in a flash! It's also adjustable by raising or lowering the boom and changing the bungies...

you got me concerned in that first pic when I saw how close the prop was to the rocks.

Your post reminded me of a little cover I made to keep the sun off while anchored. I just used a 5x7 tarp some pvc that can be broken down and stored away when not in use. It seemed to work well on that windy day while we watched the airshow from our boat at anchor. I forgot my bungee chords that day so I had to use line to secure the corners. The pvc that runs across the boom has small tabs to prevent them from sliding back and forth.

Pam had just dropped me off to get some picts of eagles eating a deer carcass,,, well, actually,,, not to get picts but I take the 5th on why I went to shore... The water there in the pict was probably 10 feet deep, it's just really clear. I had 2 more prior to that as she pulled away right next to the rocks, but you couldn't see the cover in them.
But,
having a swing keel, we retracted it and the rudder just in case.
Kevin the tent was a 15 y/o Ridgeway 2 person tent from Costco

Ok here is my economy sun shade/rain thingy.
Cheap blue tarp, pvc pipe attached to the stern end that attaches to the back stay and ends tie down to the toe rail. Front wraps around the shrouds and attach the ends together with a bungy, under $5, and yes it also flaps in the wind.

Those look pretty good. I've been using big beach umbrellas stuck in fishing rod holders. Definitely room for improvement there.

Man, you folks have some beautiful boats. Improvising is one of the keys to making a good sailor. Keep on.
